Hepatic bile is composed of water 97%, bile salts 0.7%, bilirubin 0.2%, fat 0.51% and inorganic salts. Bile acids have the main detergent action on dietary fat particles breaking them down into minute droplets. Bile only emulsifies the fat so it can be easily digested by the lipases.
