What is the difference between ESCHAROTOMY and ESCHARECTOMY??

The ending -(o)tomy means making an incision whereas -ectomy means surgical removal of something. In this case escharotomy means to make incisions into the burnt tissue (to prevent compartment styndrome) and escharectomy means excision of the eschar (burnt tissue).
